These vegan cookie dough bites are as delicious as they are easy! With garbanzo beans as the base (shh! Don’t tell anyone!) these vegan cookies are loaded with plant-based protein! Even better, you can make these delicious treats in 30 minutes!

However, I make these vegan cookie dough bites all the time.. It was due time to spice up the post!
(Plus, I was still using a cell phone camera when I started blogging.. yikes!)
Not to mention, I also tweaked the recipe a tad bit. Now there’s more protein, less measuring, and they’re as flavorful as ever! Happy day!

Every so often I get the most unquenchable craving for chocolate. Chocolate cake, chocolate bars, chocolate anything. It’s worrisome, knowing that I may very well lose my shit if I can’t remedy the situation.
Protein-Packed Vegan Cookie Dough Bites (That You Don’t Feel Badly Eating!)
These beloved bites are made from Garbanzo (Shh! That’s the big secret!) In addition, a protein powder added to the mix has them packing an impressive protein punch! Don’t let that scare you, though.. being sweetened with maple syrup, these babes can still satisfy my sugar cravings!
(Also, these cookie dough bites are very lightly sweetened. If you prefer your treats a little sweeter, experiment with adding 1-2 extra tablespoons of maple syrup.)
Ingredients aside, these cookies are sneaky nutrition at its best! I gave out an entire plate to my family before revealing they were made from garbanzo.
“WHAT!? I’m eating bean cookies?? I couldn’t even tell!”
Yup! That’s what I’m saying! These uber-creamy treats can fool the most devout cookie-holic (me included!).
I have had readers tell me to try them uncooked, but I prefer the slight crisp the 10 minute bake gives the outside 🙂
Guilt-Free Vegan Cookie Dough Bites
Ingredients
- 1, 15- oz can garbanzo beans
- 1/4 cup vegan protein powder unflavored
- 1/2 cup + 2 tablespoons peanut butter
- 1/4 cup maple syrup
- 1 teaspoon baking powder
- pinch of salt
- 1/2 cup vegan chocolate chips
Instructions
- Preheat oven to 350ºF
- Put all ingredients into a food processor (save chocolate chips)
- Process on high until smooth, scraping down the sides as needed
- Gently stir chocolate chips in by hand
- Scoop onto bake sheet, and press down, if desired (they will not spread out at all)
- Bake for 10 minutes until slightly golden
- Refrigerate afterwards!
Notes
The cooke dough bites are VERY lightly sweetened. If you prefer a sweeter treat, add 1-2 more tablespoons of maple syrup
