First, I’m gonna be real:

I loathe mornings.

Waking up sucks, I hate getting out of my warm bed, and (most of all) I hate having to cook first thing in the morning.

I’m groggy, cranky, and I’m (most definitely) hangry.. That being said, it’s gonna be a couple of hours until I’m coherent enough to cook anything.

What’s a starving vegan boy to do!?

Ingredients

    Dry Ingredients
  • 2 1/2 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/4 cup whole wheat flour (or more all-purpose)
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Wet Ingredients
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1/2 cup maple syrup
  • 1/4 cup non-dairy milk
  • 2 teaspoons vanilla extract
  • 1/2 cup smooth peanut butter (unsalted)

Instructions

  1. Start by preheating your oven to 350°F
  2. Next, whisk all dry ingredients in a large bowl until semi-uniform
  3. Mix your flax egg in a small bowl and set aside until thickened
  4. Next, whisk all of your wet ingredients until a smooth consistency is achieved
  5. Pour the wet ingredients into the dry and mix until uniform
  6. Scoop by the tablespoon onto a lined baking tray, and press down slightly into desired shape
  7. Bake for 15-17 minutes until nice and crispy

Notes
