One Pumpkin Pie Smoothie Bowl Recipe to Rule Them All…
All joking aside, I am just as ready for this season as any basic white girl. Let’s face it… I’m just as guilty!
While some parts of the US are already freezing over, the weather here in Arizona has JUST begun to cool down! This leaves me feeling super conflicted.. on one hand, I am ready for delicious fall flavors. On the other hand, it’s still hot AF outside!
I laugh so hard when people admire the “beautiful weather we’ve been having”… Listen: Just because it isn’t over 100ºF, a 95º day doesn’t make it “winter”.
The Solution? Easier Than You’d Think!
This brought me to the idea of a Pumpkin Pie Smoothie Bowl! I want to be able to indulge in all of the best seasonal flavors, without heating my house up with the oven! Killing three birds with one stone (what’s the vegan equivalent to this saying!?), the pumpkin pie smoothie also helps cool me down! Perfect for when I’m feeling hot and hangry.
This delicious pumpkin pie smoothie is luxuriously thick and creamy, thanks to frozen bananas! We topped the work of art with sliced apples (I used my two favorites: Granny Smith and Honeycrisp!), Goji Berries, Granola, Cacao, Pumpkin Seeds, Hemp Seeds, and a raw homemade date caramel sauce!
This makes the already delicious smoothie into a nutritional powerhouse, full of:
- Plant-based protein,
- Powerful antioxidants,
- Beta-carotine for eye health,
- and Zinc for immune support

Vegan Pumpkin Pie Smoothie Bowl Recipe
Ingredients
For the Homemade Date Caramel
- 1 cup dates soaked in hot water for at least an hour
- cup Scant 1 filtered water just under
- 1 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 - 1 Tablespoon cornstarch depending on desired thickness
For the Smoothie Base
- 1/2 cup pumpkin puree no added sugar!
- 2 frozen bananas
- 1/2 teaspoon pumpkin pie spice OR 1/4 teaspoon ground cinnamon and 1/4 teaspoon ground clove
- 1 Tablespoon heaping almond butter
- Splash on non-dairy milk
Instructions
- First, add all of the date "caramel" ingredients to a high-speed blender, save the cornstarch
- Blend until completely smooth and pour into a small bowl
- Mix in the cornstarch by hand, 1/2 Tbsp at a time, until desired consistency is reached
- Don't worry about scraping the blender out completely! The remaining caramel will sweeten the smoothie nicely
- Add all of the smoothie ingredients into blender, and blend until smooth
- If it seems too think for your blender, add a splash more of milk. I, however, wanted a very thick "nice-cream" like texture
- Pour into bowl, top with desired goodies, finish with the caramel, and enjoy!
