Vegan Pumpkin Pie Smoothie Bowl Recipe

For the Homemade Date Caramel
- 1 cup dates soaked in hot water for at least an hour
- cup Scant 1 filtered water just under
- 1 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 - 1 Tablespoon cornstarch depending on desired thickness
For the Smoothie Base
- 1/2 cup pumpkin puree no added sugar!
- 2 frozen bananas
- 1/2 teaspoon pumpkin pie spice OR 1/4 teaspoon ground cinnamon and 1/4 teaspoon ground clove
- 1 Tablespoon heaping almond butter
- Splash on non-dairy milk
First, add all of the date "caramel" ingredients to a high-speed blender, save the cornstarch
Blend until completely smooth and pour into a small bowl
Mix in the cornstarch by hand, 1/2 Tbsp at a time, until desired consistency is reached
Don't worry about scraping the blender out completely! The remaining caramel will sweeten the smoothie nicely
Add all of the smoothie ingredients into blender, and blend until smooth
If it seems too think for your blender, add a splash more of milk. I, however, wanted a very thick "nice-cream" like texture
Pour into bowl, top with desired goodies, finish with the caramel, and enjoy!
