Healthy Vegan Blueberry Muffins (Oil and Sugar-Free!)

If there’s one meal of the day I enjoy most it would be breakfast. That being said, I hate overly-sweet desserts disguised as “healthy”. One of the worst offenders? Muffins! That’s why I created these healthy blueberry vegan muffins (bonus: they’re oil and sugar-free!)
I’ve been on the hunt for the perfect vegan muffin for quite a while now.
What does the holy grail of vegan muffins need to have?
- Ultimate flavor
- Beautifully crispy top
- Irresistibly moist inside
- Sweetened without sugar
- Packed with plant-based protein and nutrients
Guys, I may have solved my dilemma with these healthy vegan blueberry muffins!
Healthy Vegan Blueberry Muffins Without the Sugar!
First, you might be wondering what kind of fucked up mess I’m promoting as “sugar-free”.
Hear me out!
I’ve talked plenty about my loathing for overly-sweet desserts disguised as “healthy” breakfasts.
- Wake up,
- Brush teeth,
- Eat something that puts me in a coma
No, thank you!
Instead, I sweetened these babes with banana and maple syrup.. And, to be honest, I wouldn’t even be able to tell!
I’ve made muffins with maple syrup in the past and they ended up tasting like pancakes (I’m not mad about it!). These angels, however, are hearty enough to hide the maple flavor while melting in your mouth.
Healthy Vegan Blueberry Muffins to End Bad Mornings
Aside from coffee, few things can get me out of bed in the morning.. I mean, why would I ever want to leave these bundles of warmth!?
Luckily for me, these muffins were just delicious enough to coerce me out in the morning.. I love not having to worry about cooking something up first thing!
Now I just grab my muffin, brew some coffee, and start my day off right. ????

Healthy Blueberry Vegan Muffins (Oil and Sugar-Free!)
Ingredients
Wet Ingredients
- 3 bananas mashed
- 1/2 cup maple syrup
- 1/2 cup soy milk
- 1 Tablespoon lemon juice
- 1 teaspoon vanilla extract
Dry Ingredients
- 1 cup all-purpose flour
- 3/4 cup whole-wheat flour or more all-purpose
- 1/4 cup hemp seeds
- 1/4 cup rolled oats
- 2 teaspoons baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Mix Last
- 1 cup blueberries
Instructions
- Preheat oven to 350°F
- Line muffin tray with liners (OR to prevent muffins from sticking to liners, skip the paper and grease with coconut/cooking oil (Thanks, Anna for the reader tip!)
- Start by whisking all wet ingredients in a medium mixing bowl
- In a separate, large bowl, whisk all dry ingredients together (save blueberries)
- Next, pour the wet into the dry and mix with a spatula until just mixed (avoid over-mixing)
- Just before scooping into tray, fold in the blueberries
- Fill each cup 3/4 of the way full
- Bake for 17-20 minutes until golden and a toothpick can be removed cleanly
- Let cool in tray for 5 minutes before attempting to remove

May 10, 2018 at 8:31 amI’ve been making these with 1/4 cup maple syrup and 1/2 cup rolled oats and 1 1/2 cups sprouted spelt flour or whole oat flour (or a combo) and they have been delicious!! Just FYI.
