A Vegan Banana Chip Muffin Recipe to Get Your Ass out of Bed
Bananas, muffins, and chocolate, oh my! This is heaven wrapped into a pastry, guys.
Now is the time to stop pretending your plain Quaker oatmeal is “good enough”, Linda. You deserve a real breakfast.. After all, you got out of bed today! 👏
That being said, you need something to fuel your day, not something to give you a sugar-rush and let you crash.
Fear the sugar-crash no more!
This vegan muffin recipe is sweetened exclusively with:
- Bananas,
- Applesauce, and
- Maple syrup!
No refined sugar here, friends! Just wholesome, plant-based goodness that isn’t gonna leave you wired.
In fact, if you’ve been follow along, you’d know I loathe “desserts-disguised-as-breakfasts”. My sensitive stomach hates me if I start the day with a giant bowl of sugar.
Instead, I created these treats perfectly balanced. Not too sweet, but flavorful enough to make you feel awesome. If you want them to be even less sweet, consider omitting the chocolate chips!

Easy Vegan Banana Chip Muffin Recipe
Ingredients
- 1 flax egg 1 Tablespoon ground flaxseed + 3 Tablespoons water
Dry Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole-wheat flour or more all-purpose
- 1 Tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon optional
Wet Ingredients
- 3 medium spotty bananas mashed (about 1 1/2 cups)
- 2 Tablespoons maple syrup
- 1/2 Tablespoon vanilla extract
- 1 Tablespoon coconut oil use refined if you don't want coconut flavor
- 1/2 cup applesauce
Mix-in Last
- 1/4 - 1/2 cup non-dairy chocolate chips
Instructions
- Preheat oven to 350°F and line a muffin tray with papers
- Mix the flax egg and set aside
- Combine all dry ingredients in a large mixing bowl
- Whisk until combined evenly
- In a separate, medium mixing bowl, add the wet ingredients and whisk until combined
- Pour the wet ingredients, and the flax egg, into the dry ingredient bowl
- Stir with a spatula until just combined.. Don't over-mix!
- Lastly, incorporate in the chocolate chips
- Scoop into baking tray (ice cream scoops work awesomely!)
- Bake for 20-25 minutes until golden
- Allow muffins to cool completely before removing from tray
