Easy Vegan Stuffed Potato Skins, Loaded to the Max!
These aren’t your standard, boring potato skins.. noooo siree! These vegan stuffed potato skins are just that; stuffed to the max! Each bite bursts with an intense amount of “cheezy” yet spicy flavor. Best of all, these vegan stuffed potato skins are easy as hell to make!
Let’s be honest: I shouldn’t even write the rest of this post.
I should just add the photos, write the easy recipe and leave it at that.. the pictures can talk for themselves!

Easy Vegan Stuffed Potato Skins When Ain’t Nobody Got Time!
Okay, hear me out. You’re probably looking at the prep time of this recipe and thinking “come on, Nick. 1+ hours is not a quick or easy recipe”. You’ve got it all wrong, baby!
I baked my potatoes in the oven (since I try to avoid microwaves), but if you’re cool nuking it, go ahead! This will shave off approximately 50 minutes of your precious time.. so keep that in mind!
As far as ease of making goes, nothing gets easier!
I’ll break the process down for you:
- Bake the potatoes
- Cut the potatoes
- Scoop the potatoes
- Mix it all together
- Scoop it back
- Bake again to crisp sh*t up!
Easy enough, right!?
Loaded Potato Skins, the King of Party Food!

If you haven’t seen the show yet, just know that it’s pretty much the Gay Olympics. That being said, it’s a tradition to make the premier episode extra fun by throwing a giant viewing party.. and what’s the best thing about viewing parties?
Hint: It’s the food!!
The Best Part of These Vegan Stuffed Potato Skins? The Customizability!
So, I’m a huge fan of Nutritional Yeast and Sriracha.. but what if you’re not? Why not switch things up?
That’s the beauty of the recipe! I see the baked potatoes as a blank canvas, ready to add your favorite flavor combinations.. Experiment with spice levels, add some veggie bacon, even top it off with chocolate! (Too far??)
Long story short, have fun with the recipe! I’ve changed it hundreds of times, but this is my favorite version to date!
Easy Vegan Loaded Potato Skins
Ingredients
- 3 large russet potatoes
- 3 tablespoons oil
- 1 teaspoon salt
- 3 tablespoons nutritional yeast
- 1 tablespoon mustard
- 1 tablespoon sriracha
- 1/4 cup daiya cheddar shreds optional
Instructions
- Preheat the oven to 400ºF
- Line the potatoes on a baking sheet and bake for 1 hour, turning halfway through
- Once pierced easily with a fork, remove from oven and let cool slightly
- Cut the potatoes length-wise and scoop out the insides (leaving just enough for the skins to still hold up) into a large bowl
- Add the rest of the ingredients and mix until it's nice and cheezy colored
- Scoop back into potato skins and pop back into the oven for another 15 minutes
- Remove from oven, let cool slightly, and top as your heart desires!
