Easy Vegan Banana Chip Muffin Recipe

Ingredients

  • 1 flax egg 1 Tablespoon ground flaxseed + 3 Tablespoons water

Dry Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour or more all-purpose
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon optional

Wet Ingredients

  • 3 medium spotty bananas mashed (about 1 1/2 cups)
  • 2 Tablespoons maple syrup
  • 1/2 Tablespoon vanilla extract
  • 1 Tablespoon coconut oil use refined if you don't want coconut flavor
  • 1/2 cup applesauce

Mix-in Last

  • 1/4 - 1/2 cup non-dairy chocolate chips

Instructions

  • Preheat oven to 350°F and line a muffin tray with papers
  • Mix the flax egg and set aside
  • Combine all dry ingredients in a large mixing bowl
  • Whisk until combined evenly
  • In a separate, medium mixing bowl, add the wet ingredients and whisk until combined
  • Pour the wet ingredients, and the flax egg, into the dry ingredient bowl

  • Stir with a spatula until just combined.. Don't over-mix!

  • Lastly, incorporate in the chocolate chips
  • Scoop into baking tray (ice cream scoops work awesomely!)
  • Bake for 20-25 minutes until golden

  • Allow muffins to cool completely before removing from tray
