Easy Vegan Loaded Potato Skins

These aren't your standard, boring potato skins.. noooo siree! These vegan stuffed potato skins are just that; stuffed to the max! Each bite bursts with an intense amount of "cheezy" yet spicy flavor. Best of all, these vegan stuffed potato skins are easy as hell to make!

Ingredients

  • 3 large russet potatoes
  • 3 tablespoons oil
  • 1 teaspoon salt
  • 3 tablespoons nutritional yeast
  • 1 tablespoon mustard
  • 1 tablespoon sriracha
  • 1/4 cup daiya cheddar shreds optional

Instructions

  • Preheat the oven to 400ºF
  • Line the potatoes on a baking sheet and bake for 1 hour, turning halfway through
  • Once pierced easily with a fork, remove from oven and let cool slightly
  • Cut the potatoes length-wise and scoop out the insides (leaving just enough for the skins to still hold up) into a large bowl

  • Add the rest of the ingredients and mix until it's nice and cheezy colored

  • Scoop back into potato skins and pop back into the oven for another 15 minutes

  • Remove from oven, let cool slightly, and top as your heart desires!

Notes

Keep any leftovers sealed in the fridge and pop in the oven when you're ready to enjoy! They will last about a week in the fridge
