Vegan Hash Brown Waffles, Loaded Style!
Imagine hot, crunchy, and crispy hash browns… cooked in a waffle iron! No, it’s not an April-fools joke.. I would never kid about something this delicious! Save time (and sanity) with this easy vegan hash brown waffle recipe, loaded to the max!

- 3 russet potatoes shredded
- 4 slices vegan bacon prepared to package instructions and roughly chopped
- 1/4 cup cilantro roughly chopped
- 2 tablespoons olive oil more for greasing iron
- 1 tablespoon arrowroot powder
- 1/4 cup nutritional yeast
- Salt and pepper to taste
Optional Toppings
- Sliced avocado
- Vegan mayo/sour cream
- Vegan cheese
- Hot sauce
Wash the potatoes before shredding (I used a cheese grater) into a large bowl
Rinse potato shreds throughly with cold water, drain and press as much moisture out as possible
Add the rest of the ingredients (save the toppings) and mix to incorporate
Brush waffle iron with cooking spray/oil and preheat to medium-high
Spoon 1/2 of the mixture into the preheated waffle iron until it is semi-overflowing
Press lid down and apply force to sandwich together
Cook for 10-15 minutes until evenly golden (start checking around 10 minute mark)
Once cooked through, gently remove from iron and dress up how you please!
