Vegan Protein Bar Recipe with Cashews

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup sunwarrior vegan protein natural flavor
  • 1/4 cup hemp seeds
  • 1/2 cup rolled oats ground into flour
  • 1/2 cup raw cashews chopped coarsely
  • 1/4 cup ground flaxseed
  • 1/4 cup brown rice syrup
  • 2 Tbsp almond milk
  • 1 Tbsp spirulina powder
  • 1/2 Tbsp vanilla extract
  • 1-2 Tbsp agave syrup for extra sweetness optional

Instructions

  • Toss all ingredients into stand mixer
  • On medium-low setting, incorporate ingredients together
  • If the dough seems too dry, add a splash more of milk
  • If it seems too wet, add more flaxseed or oat flour
  • Once it starts to hold it's shape easily, transfer to medium (ungreased) casserole dish
  • Press (or roll) down until uniform shape

  • Freeze for at least 1 hour and cut into 9 semi-even pieces

  • Keep in freezer as they start to lose their shape if left out too long
