Imagine hot, crunchy, and crispy hash browns… cooked in a waffle iron! No, it’s not an April-fools joke.. I would never kid about something this delicious! Save time (and sanity) with this easy vegan hash brown waffle recipe, loaded to the max!

We all know that breakfast is the most important meal of the day, but why then do 31 million Americans skip eating in the morning?

My understanding is:

Ain’t nobody got time for that.

Vegan Hash Brown Waffles: My Reason to Wake Up!

First of all, you might be asking: “WTF are vegan hash brown waffles!?”
Let me break it down for you: vegan hash browns, cooked in a waffle iron.

Next, you might be asking: “WTF is the point of making vegan hash browns into waffles!?”
The short answer is I’m all about simplicity!

Seriously! Anything that makes my routine (especially my morning routine) easier is a win for me!

That’s why I am ecstatic to share this vegan hash brown waffle recipe with you!
They’re:

  • Easier to make than regular hash browns
  • Delicious
  • Perfectly crispy
  • Shaped for topping!

No More Goopy Vegan Hash Browns!

The real reason I’m in love with this recipe? I suck at making regular vegan hash browns.
Who knows why, but they never cook together and crisp up. I always somehow end up with a soggy, oiled down mess. Disgusting!

The only time they turned out well in the past was when I used frozen hash browns.. and does that even count as cooking? Not in my book!

After some experimentation, I discovered the secrets to homemade vegan hash browns.

1. Rinse Your Potato Shreds!

If you don’t rinse the excess starch off of the potato shreds, you’ll end up with a gummy hash brown. Hey, maybe that’s your favorite.. I don’t judge. I’m a bigger fan of the crunchy, crispy variety, however, so I rinse.

Some suggest soaking, but rinsing until the water runs clear will do the same thing (in a lot less time!)

2. Use Arrowroot Powder as a Binder

Non-vegan hash brown waffles are traditionally binded with eggs. First of all: GROSS. I want hash browns, not scrambled eggs!!

The best vegan alternative I’ve found is: *drumroll* Arrowroot Powder!

Arrowroot Powder is:

  • Naturally gluten-free
  • Abundant in several B-vitamins
  • Rich in minerals (specifically copper, iron, manganese, magnesium, phosphorus, and zinc)
  • A fantastic binder in recipes (woot woot!)

Now that you have delicious, crispy hash browns, next thing to do is dress them up!

I’m forever in love with Mexican food, so we went all out loading these vegan hash brown waffles to the max.

Ingredients

  • 3 russet potatoes shredded
  • 4 slices vegan bacon prepared to package instructions and roughly chopped
  • 1/4 cup cilantro roughly chopped
  • 2 tablespoons olive oil more for greasing iron
  • 1 tablespoon arrowroot powder
  • 1/4 cup nutritional yeast
  • Salt and pepper to taste

Optional Toppings

  • Sliced avocado
  • Vegan mayo/sour cream
  • Vegan cheese
  • Hot sauce

Instructions

  • Wash the potatoes before shredding (I used a cheese grater) into a large bowl
    Shredded russet potatoes for vegan hash brown waffles
  • Rinse potato shreds throughly with cold water, drain and press as much moisture out as possible
  • Add the rest of the ingredients (save the toppings) and mix to incorporate

  • Brush waffle iron with cooking spray/oil and preheat to medium-high
  • Spoon 1/2 of the mixture into the preheated waffle iron until it is semi-overflowing
  • Press lid down and apply force to sandwich together
  • Cook for 10-15 minutes until evenly golden (start checking around 10 minute mark)
  • Once cooked through, gently remove from iron and dress up how you please!

There you have it! My perfect brunch recipe when I want to eat like a king (while still being lazy! 😜)
