Nothing says fall quite like cinnamon-apple-anything. That’s why I wrapped the season up into one bite-sized treat; these Vegan Cinnamon Apple Scones. Perfectly flaky, subtly sweet, and oh-so-delicious.

Apple Scones, For The Win!

First of all, these are hands-down my favorite scones I’ve ever made.

No joke!

These babes are:

  • Flaky
  • Crispy
  • Crunchy
  • Chewy
  • Ooey
  • Gooey
  • Deliciousness

How is that possible?

It’s all about the dough, baby!

I learned, through plenty of trial and error, that scone dough should be flaky and falling apart.. If that’s the kind of scone you’re looking for!

Furthermore, it’s almost a requirement for the butter to be solid. I’ve made scones with melted oil before and it results in a scone seriously lacking crumb.

What does this mean?

Your final product is going to be delightfully crunchy, but oh-so-soft on the inside. These apple scones are crumb central, baby!

These apple scones are the perfect balance of sweetness.. Thanks to the apples!

That being said, if you are craving a dessert scone, simply sprinkle with sugar before baking.. I won’t judge!

Regardless, we ate these babes for breakfast and dessert. Who says we have to play by the rules!?

Ingredients

  • 2 flax eggs (1 Tablespoon ground flaxseed + 3 Tablespoons water per each)
  • 2 cups all-purpose flour
  • 3/4 cup whole wheat flour
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup oil (I used coconut)
  • 1 cup diced apple (about 1 small apple)
  • 1 teaspoon vanilla extract
  • 1/2 cup applesauce, unsweetened

Instructions

  1. Preheat oven to 425°F
  2. Start by mixing your flax eggs. Leave them sitting for 5 minutes to set
  3. In a large mixing bowl, whisk the flours, sugar, salt, baking powder, and cinnamon together until uniform
  4. Next, in a separate bowl, whisk the oil, flax eggs, vanilla, and applesauce together
  5. Pour the wet ingredients into the dry and mix to combine
  6. The dough should be slightly flaky, not too wet, and not too dry
  7. Finally, incorporate the apple chunks and mix once again
  8. Scoop onto lined baking tray and bake for 18-22 minutes, or until golden
  9. Let cool slightly before removing from pan

Notes

Store scones in a sealed container at room-temperature for up to two weeks. May be frozen for longer storage.
