Easy Vegan Strawberry Ginger Lemonade
Ah, springtime! Time for picnics, yoga classes, and swapping out those nasty winter boots for your favorite flats. What could make it any spring-ier? Oh yeah.. how about a tall glass of this insanely refreshing (and easy to make!) vegan strawberry ginger lemonade!?
Strawberry Ginger Lemonade: the Classic Summertime Drink
It’s my favorite time of year! Aside from my allergies trying to kill me, I’m happy spending as much time outdoors as possible. That is, until the 115ºF+ hits.. then I’ll be hiding in a cold, dark cave.
But, until then, I’m outside soaking up the Vitamin D, sipping on a glass of this dangerously refreshing lemonade. What makes it so refreshing? It’s that damn ginger!
- is a great anti-inflammatory,
- helps treat nausea,
- can help improve brain function and protect against Alzheimer’s
Talk about a miracle food!
Aside from the astounding health benefits of ginger, I’m honestly in love with the flavor. The subtle spiciness can help kick any smoothie or juice into gear, why not lemonade!?
Another reason for this season being so wonderful? Strawberries are in season!!

Glass of Strawberry Ginger Lemonade: Hold the Diabetes, Please
I was so excited to share this recipe because it’s been years since I’ve even drank lemonade.
This was for two reasons:
- I was a stupid teenager that got way too drunk on Mike’s Hard Lemonade and it ruined it for me.
- The sugar content in regular lemonade is appalling.
Now, it’s been 6 years since the Mike’s Hard Lemonade trauma.. I’m way over that negative memory! What I’m not over are the 3,000 grams of sugar in a regular glass of lemonade. (Just a slight exaggeration)
What’s the best alternative? Especially for people who can’t stand stevia? Maple syrup, of course!
The sweet, golden nectar also known as Maple Syrup is a favorite in my kitchen.
The reasons? Maple syrup:
- Contains several vitamins and minerals
- Is rich in antioxidants,
- and may help support your heart and immune system.
What other sweetener does that much for you!?
Granted, Maple Syrup is still a sweetener and should be used sparingly. I’m not pretending it’s good to drink on its own for the benefits!
Also, especially with the strawberries, this lemonade has a little wiggle room for sweetener. I used 1/2 cup and it was perfect for me, as I like my lemonade to be slightly tart. Experiment to find a ratio that works for you!
