Vegan Scone Recipes are a favorite ’round these parts.. clearly!

But.. What exactly is a scone!?

A Scone is a small unsweetened or lightly sweetened biscuit-like cake made from flour, fat, and milk and sometimes having added fruit.

Welp, there ya’ go! Pretty vague definition, if you ask me!

Let me clarify:

Scones come in all shapes, flavors, sizes, and textures. For example, “traditional” British scones look like burned dinner rolls.. not what I’m after!

When I think of Scones (her majesty forgive me!), I’m dreaming of the crumbly, cookie-like scones we munch on in the States.

Don’t agree with my definition of a Scone? Write your own damn recipe! Or just make this one, because this sh*t is delicious (no matter what you call it!)

Lightly Sweetened Peach Scones for the Whole Family

If you’ve been following along with my adventures, you’d know by now that I can’t stand overly-sweet breakfasts. My ultra-sensitive stomach doesn’t appreciate a hefty dose of sugar any time of the day, but especially not for breakfast!

That’s why I’ve kept the sweetener way down in this vegan peach scone recipe. I love letting the natural sweetness of the peaches shine through!

That being said, if you’re looking for more of a “dessert scone”, sprinkling sugar on top will add a delicious and sweet crunch to each bite.

Also, I added slightly over the 1 cup of diced peaches.. I REALLY wanted to know they were peach-flavored. 😜

If you stick to 1 cup (or even slightly less), yours wont look so haphazard.

Ingredients

  • 2 flax eggs (1 Tablespoon ground flax + 3 Tablespoons water per "egg")
  • 1 cup All-Purpose Flour
  • 1 cup Whole Wheat Flour (or sub for more all-purpose)
  • 1/4 cup sugar (preferably Raw , Date , or Coconut )
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 Tablespoon baking powder
  • 6 Tablespoons cold Coconut Oil (use refined if you don't want coconut flavor)
  • 1/2 cup non-dairy milk (+1-2 Tablespoons as needed)
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup diced peaches (fresh, frozen, or canned)

Instructions

  1. Preheat oven to 375ºF
  2. Mix flax eggs and set aside
  3. Add flours, sugar, salt, cinnamon, and baking powder to a large bowl and whisk to combine
  4. Pour the rest of the ingredients into the dry (save the peaches), and combine with a spatula
  5. (If the coconut oil isn't incorporating, use a fork or Dough Blender )
  6. Lastly, incorporate the peaches
  7. Scoop onto lined baking sheet
  8. Bake for 20-25 minutes until nice and golden
  9. Remove from oven and allow to cool on tray for 5 minutes before transferring to cooling rack

Notes

Want a sweeter scone? Sprinkle sugar on top before baking for a delicious crunch! Store sealed in the fridge for up to 2 weeks. May be frozen for longer storage!
