Not all vegan grilled cheese recipes are created equal! This masterpiece sets itself apart with battered Beyond-Meat Chicken, spicy buffalo sauce, fresh greens, and ranch sandwiched between the best bread ever. I’m talkin’ “happily-paying-$15-for-this-great-of-a-grilled-cheese” delicious. Not to mention, it’s baked (not fried!), vegan, dairy-free, and can be thrown together in no time!

I would like to start this post off with an apology and explanation.

As some of you may have noticed (or maybe not! haha) I skipped last week’s recipe and have been completely absent from social media.

In fact, I barely left my house at all.

I don’t like talking about it, but I have been tormented by anxiety and depression my entire life. The countless medications I was prescribed growing up worsened the situation by making me overweight, unhappy, and numb.

Weight gain is NEVER a good side-effect, but especially not from an anti-depressant!

Now, I try my best to handle these emotions holistically. My mornings usually start with nausea (and if I’m particularly stressed, a bit of dry-heaving). The difference is I now know how to ground myself by deep-breathing, using essential oils (namely peppermint), and meditating.

Other days I struggle more with the terrible thoughts in my head; “you’re not good enough”, “people just pretend to like you”, “you won’t ever be happy”. It sucks, man!

Unfortunately, it is all too easy to try and ignore these issues. When the idea of life is a bit too overwhelming, I crawl in bed, sit in the dark, and sleep all day.

Does it help? Absolutely not! But it is a natural reaction of mine to hide, so I stick with it.

My Thoughts Do Not Control My Mind

Long story short, I left the restaurant I worked at to be the Assistant Manager of a different local vegan restaurant. I couldn’t be happier!

The food is

  • almost completely made in-house
  • 98% Organic
  • 100% Non-GMO
  • seasonal, local, and
  • AMAZING!

Despite my body fighting every step of the way, I feel amazing. Change is good for me! I refuse to let negative thoughts stop me from achieving anything.

Spicy Chicken Vegan Grilled Cheese Recipe, FTW!

This vegan grilled cheese recipe was an excuse for me to imitate the Buffalo Beyond Meat “Chicken” they sell in the deli at Whole Foods. It was easier than I thought!

First, you coat the chicken in a thick batter that bakes to crisp perfection! This allows for a maximum sauciness-to-chicken-ratio. I opted for a store-bought sauce that was decent, but the homemade pepper sauce I made for my Cauliflower Buffalo Wings would be heavenly here!

I then melt the deliciously dairy-free Daiya Cheddar Slices with the chicken on Dave’s Killer Bread in a Panini press! If you don’t have a press, you can just as easily grill it on the stove top.

I know it sounds like a hassle, but once the sandwich is nice and toasty, I peel it apart to add the greens and ranch. There’s a method! The greens get wayyyy too hot and wilted for my liking if they’re in for the whole time. Adding them afterwards results in perfectly warmed lettuce. Besides, the ranch will cool the sandwich off so you can eat it faster! Win-Win! 😉

Buffalo Chicken Vegan Grilled Cheese Recipe

Ingredients

    For the Battered Chicken
  • 1 bag Beyond Meat "chicken" strips, slightly thawed on counter for 30 minutes
  • 1/2 cup whole-wheat flour
  • 1/2 cup plain soymilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1/8 - 1/4 cup pepper sauce, enough to coat evenly
  • For the Sandwich
  • 2 slices of bread
  • fresh greens
  • 1 slice cheddar style
  • 1 tablespoon non-dairy ranch

Instructions

    Prepare the Battered "Chicken"
  1. Preheat oven to 450°
  2. Mix the flour, soymilk, and seasonings in a medium-sized bowl until smooth
  3. Smother the Beyond Meat Chicken until they’re coated semi-evenly
  4. Bake for 10 minutes, flip, and bake for 5-10 more
  5. Once cool enough, transfer baked chicken to another bowl
  6. Coat the chicken with the wing sauce
  7. Assemble the Sandwich
  8. Place one slice (two is way too overwhelming) of the non-dairy cheese
  9. toppings for vegan grilled cheese sandwich
  10. Put on as much chicken as you can fit and crown this baby with the other piece of bread
  11. Cook in a hot Panini press for 6-10 minutes
  12. Remove, allow to cool enough to handle
  13. Separate the cheesy-goodness and add the lettuce and ranch
  14. Sandwich back together and enjoy!
